Crock Pot Apple Pork Chops
Pork chops are rare in Casa de CookWOD. Not rare in cooking temperature; rare in that I don’t often prepare them because they’re so easy (for me) to get wrong, and then you end up chewing on rubber. Crock pot to the rescue! I was really feeling the fall-ish flavours of onions, apples, sage, and pork, so that’s what went into the crock pot. What came out were super flavourful, fall apart tender chops!
What you need:
1 large yellow onion
2 medium apples (crispy varieties are best)
4 bone-in pork chops
2-3 tbsp stone ground or dijon mustard
1 tsp dried sage
optional: fresh sage leaves, minced
What to do:
Pull out your good ole trusty crock pot.
Cut onion from north to south. Place flat side down and slice into ¼” half moons. Do the same with the apples and add to crock pot.
Generously season pork with salt and pepper on both sides. Shmear pork chops with mustard and sprinkle with dried sage. Place on top of apples.
Cook on low for 6-7 hrs or store crock pot in fridge until ready to cook.
Serve pork smothered in onions and apples. Garnish with fresh sage.
