Don’t let the list of ingredients in this recipe deter you from making it! Assuming you have a well stocked spice cabinet you really shouldn’t need to buy much (maybe the first four ingredients), nor will there be much work involved. After all we are recruiting the crock pot to do most of the work!
This recipe is found in The Indian Slow Cooker but ever so slightly adapted. The author calls it “old clothes” because the meat should ultimately fall apart like old clothes.
What you need:
2 medium yellow onion, peeled and chopped
2 lbs beef brisket, trimmed of fat
1-2″ piece ginger, peeled and cut into chunks
10 cloves garlic, peeled
1 heaping tsp ground ginger
4 green cardamom pods
3 bay leaves
1 cinnamon stick
1 tbsp garam masala
2 tbsp ground fennel
1 tbsp red chile powder
2 pinches ground nutmeg
2 tsp kosher salt
½ c broth or water
What to do:
Place onions in bottom of crock pot. Add beef.
In food processor, grind ginger and garlic into fine mince or paste. Schmear all over beef.
Add all spices and pour broth around meat.
Cook on low for 9-12 hrs. Beef should easily pull apart.
This would be super good with naan or with slightly sweet plantain bread!
