Super Quick Stir Fry
You can really use any veggies for a stir fry, so feel free to pillage the fridge! I tend to buy whatever veggies are on sale, in my garden or at the farmer’s market. Just know that this recipes is very free form.
The most important thing to consider is the order in which you cook the veggies. You’ll almost always start with onions, but from there add the firmer veggies, like carrots, and end with tender veggies, like greens. Also, the heat is typically medium high for a stir fry, so you’l want to move your veggies around almost constantly.
What you need:
1 tbsp coconut oil
1 onion, sliced
1 bell pepper
2 small zucchini
1-2 tsp Chinese five spice
splash of tamari
handful carrot greens (because I have a zillion coming out of the garden)
What to do:
Heat oil in wok or large pan over medium high heat.
Add onions and a pinch of salt; stir fry continuously for 3-4 minutes.
Add remaining veggies and continue stirring 5-6 minutes.
Add spice and tamarin. Toss to coat.
Mix greens in to wilt just before serving.
