Spiced Delicata Rings
You could easily substitute sweet potatoes for this recipe, but if delicatas are new to you, give this recipe a whirl! They are sweet and tender squash, and ultimately they’re low maintenance because you can enjoy them with the skin, too!
What you need:
2 delicata squash
2 tsp paprika
1 tsp ground cumin
½ tsp salt
¼ tsp pepper
⅛ tsp cayenne
1 tbsp F.O.C. (fat of choice: olive oil, melted coconut oil, tallow, etc.)
What to do:
Preheat oven to 450°F.
Scrub and rinse delicatas.
Leaving skin on, cut squash into ½” thick rings. Toss into a large ziplock bag (or bowl).
Add spices and oil to bag and squish around to thoroughly coat squash. These can be stored in the fridge for 2-3 days until you’re ready to cook them.
For easier clean up, cover baking sheet with foil or use a silicon baking mat. Spread squash across baking sheet in single layer making sure that they don’t overlap too much, especially if you want crispy rings!
Bake 15 minutes. Turn over and bake another 15-20 minutes, or until rings are tender.
