Smoky Black Bean Salad

I love doubling this recipe and swapping black beans out for pinto beans, too. The flavors get better as they meld together in the fridge, so making it ahead of time is a no brainer! It was inspired by the Santa Fe Black Bean Salad from Cooks Interruptus but made with time sensitivity in mind, although the original certainly isn’t all that time consuming either!

What you need:

  • 1 red bell pepper

  • 1 can no salt/sugar added corn

  • 2 cans black beans

  • 2-3 green onions

  • ½ cilantro

  • 2 tbsp olive oil

  • juice of 1 lime

  • 1 tbsp ground cumin

  • ½ tbsp smoked paprika

  • ½ tsp kosher salt

What to do:

  1. Dice bell pepper.

  2. Drain and rinse corn and black beans.

  3. Finely slice green onions and mince cilantro.

  4. Mix aforementioned ingredients in large bowl.

  5. Add remaining ingredients. Mix thoroughly and adjust seasoning as desired.
