Salsa Cabbage Slaw
This is one of my go-to super simple salads that often makes appearances at potlucks when I’m in a pinch. Cabbage is a staple veggie in my house; if there isn’t a head of cabbage in my fridge I have seriously dropped the ball. The most basic version of this slaw is literally cabbage smothered in salsa with a squeeze of lime, but here’s a jazzed up version, which is still ridiculously easy!
What you need:
½ head cabbage (red or green), shredded
1 red bell pepper, sliced
1-2 carrots, grated
1 mango or ¼ pineapple
½ c cilantro, minced
½-¾ cup salsa
juice of 1 lime

What to do:
If you have a food processor, just run all of the veggies through the shred blade setting and toss them in a large bowl with the salsa, fruit, cilantro and lime juice. If you don’t have a food processor:
Core and shred cabbage.
Core and julienne (thinly slice) pepper.
Grate carrot with cheese grater or julienne into match sticks.
Peel and dice mango or pineapple.
Mix all ingredients in large bowl and add salsa and lime juice to taste. Add salt and pepper to taste.
