Roasted Veggie Medley

Almost every week without fail I roast a big batch of random non-starchy veggies, which generally make up a good portion of my lunches during the week. While the veg combo varies the method is the same. You can really roast just about any vegetable, and I recommend it not only because you can make a lot, but also because it transforms veggies by caramelizing the sugars and bringing out their natural sweetness. Hello delicious!

Here is an excellent tutorial if roasting is new cooking method for you. If I’m in a pinch and didn’t make it to the store I rely on my staple veggies: onions and cabbage. Yep, it can actually be that simple! Season these anyway you want: basic s & p, rosemary and balsamic, cumin and chile powder. My favorite is a combination of caraway seeds and curry powder!

What you need:

  • 1 onion

  • 1 bell pepper

  • ½ eggplant

  • 1 c mushrooms

  • 1 tbsp FOC (fat of choice)

  • 1 tsp dried rosemary

  • s&p


  • 1 onion

  • ½-1 head cabbage

  • 1 apple

  • 1 tbsp FOC

  • ½ tsp caraway seeds

  • 1-2 tsp curry powder

  • s&p


  • 1 bunch asparagus

  • ½# green beans

  • 1 tbsp FOC

  • s&p


  • 1-2 broccoli crowns

  • 1 head cauliflower

  • 1 tbsp FOC

  • 1 tsp cumin

  • 1-2 tsp chile powder

  • s&p

What to do:

  1. Preheat oven to 425.

  2. Cut all vegetables into about the same size so that they roast at the same rate, approximately 1″ chunks.

  3. Place directly on to baking sheet or into large bowl. Drizzle with FOC and toss with with desired seasonings to coat.

  4. Roasting time will depend on the firmness of the veggies. Most non-starchy veggies, like those listed above, will likely roast for 25-35 minutes. Toss half way through for even browning (caramelization).

  5. These are excellent for lunch on the go or even to thrown into scrambled eggs in the morning.

Note: Be sure that when you place your vegetables on the baking sheet they are overlapping as little as possible. Overlapping veggies = steamed veggies rather than roasted.
