Greek Yogurt Banana Pancakes
Since I don’t generally keep flour in the house I adapted this recipe to use oats instead and they turned out great! I also omitted the honey because I’m no fun like that. Actually I used a nice ripe banana, so I didn’t think I needed much added sweetness. The tangy flavor of the plain yogurt shines through creating a nice flavor contrast, too.

Who am I kidding? Really these are just an excellent vehicle for peanut butter. Lots of peanut butter.
What you need:
1 c oats
2 tsp baking soda
½ tsp baking powder
¼ tsp cinnamon
pinch of salt
1 egg
1 medium ripe banana
1 cup plain Greek yogurt
butter or coconut oil for cooking
What to do:
Buzz oats through blender until they resemble a flour-like texture.
Add remaining dry ingredients and pulse.
Add egg, banana, and yogurt and blend into batter.
Melt fat in medium high skillet. Pour 3-4″ pancakes into pan and flip when bubbles have dissipated in batter, 2-3 minutes. Allow to cook an additional minute and remove from pan.
Top with peanut butter (or whatever toppings your heart desires) and enjoy!
